The new issue of PC Gamer UK (Dec 2004, issue 142) has a one page article on Bioshock.

There isn't a great deal of information, but they mention that Irrational cites the film The Fly and specifically the questions it raises about humanity as part of Bioshock's inspiration.
Additionally they put forward a release date of 2006.
